You all know that I acquired a food processor from my beautiful friend a few months ago, right? If not you can read about it here. The reason why she gave it to me was not only to help my family eat nutritous meals but because she no longer had a need for it, she’d just bought a Bellini Kitchen Master. So over the last few months I’ve been playing the veggie ninja,  & hiding as many nutrients into my fussy four year olds diet as I possible can.

It hasn’t really worked but it has changed the way that I cook. And seeing as I use it almost every second day, & my blender jug went to heaven when my lil’miss helped herself to the cupboard, I thought it was time to give thermo cooking a go. And with the Kitchen Masters on sale at 30% off, I couldn’t refuse.

Here’s the first treat I made for the kiddies yesterday. It has no added sugar (there’s already plenty in the dried fruit), no dairy, & is also gluten free. You can easily make it in a food processor.

*I also made the almond meal in the Kitchen Master.

Coconut Fruit Balls

1 cup of dried fruit  (I  used mango, cranberries, blueberries, & dates)

2 tablespoons boiling water

1/4 cup almond meal

1/2 cup dessicated coconut

1 tablespoon orange juice

1 tablespoon of rice flour

1/2 cup extra coconut for rolling in ( the balls, not you)

 

1. Place the dried fruit into food processor & process until finely chopped.

2. Add boiling water & let sit to soak up for a few minutes.

3. Add almond meal, coconut, rice flour, & orange juice. Then blend until the mixture forms a dough.

4. Roll into balls & roll in coconut. Store in container in the fridge.

 

Bellini Kitchen Master method:

Place dried fruit in jug speed 5, 10sec.

Add water speed 2, 20 secs, 80 degrees.

Add almond meal, coconut, rice flour, & orange juice speed 4 10secs, or until it forms a dough.

Rolls into balls, roll in coconut, & store in container in fridge.
