coconut&date

I’ve been working out lately, exercising of the physical kind. It’s been a long time coming, & now that Will’s at kindergarten three days a week I have no excuses about getting my arse into gear. The only thing is, I’m not so sure if my mind likes it as much as my body does. I feel like a Julia Gillard trying to convince working parents that our childcare rebates are the norm, it’s just never going to feel right.

So today I made cake, you know, the type of cake that always manages to pick you up when ever your down, yeah that one. Here’s my pick me up, coconut & date loaf, guaranteed to have you smiling. The recipe comes from the Best Recipes web site, you can find it here.

This cake will in no way enhance your workout, I’ve only posted it because on some days only cake will do.

Coconut & Date Loaf

Ingredients:-

1 cup of chopped dates

1/2 cup of boiling water

125g butter

1/2 cup caster sugar

1 cup self-raising flour

1/4 cup desiccated coconut

1 egg

 

Method :-

1. Line loaf tin with baking paper.

2. Combine dates & boiling water, stand for 15mins.

3. Cream butter & sugar.

4. Add egg & beat until combined.

5. Add flour, coconut & date mixture.

6. Spread into tin & bake at 180 degrees c for 40 mins.

7. Stand for 5 mins before turning onto a wire rack.
